1 cup granulated sugar

1/4 cup golden syrup or corn syrup

1 teaspoon white vinegar

1 teaspoon baking soda


Line a baking tray or sheet pan with parchment paper and set aside.

In a large, heavy-bottomed saucepan, combine the sugar, golden syrup (or corn syrup), and white vinegar over medium heat.

Stir continuously until the sugar has dissolved and the mixture starts to bubble.

Insert a candy thermometer into the mixture and continue to cook, without stirring, until the temperature reaches 300°F (150°C), also known as the hard crack stage.

Remove the saucepan from the heat and quickly stir in the baking soda. The mixture will foam and increase in volume.

Immediately pour the foaming mixture onto the prepared baking tray, spreading it out with a spatula into an even layer.

Allow the Yellowman to cool and harden completely at room temperature.

Once hardened, break the Yellowman into irregular pieces or shards using a knife or your hands.

Store the Yellowman in an airtight container at room temperature to maintain its crisp texture.
