Traditional Irish Blaa

500g strong white bread flour

10g salt

10g caster sugar

7g instant yeast

300ml lukewarm water

30g unsalted butter, softened

Flour, for dusting


Mix and Knead Dough:

In a large mixing bowl, combine the flour, salt, sugar, and yeast.

Gradually add the lukewarm water and mix until a dough forms.

Turn out the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

Incorporate Butter:

Add the softened butter to the dough and knead until it is fully incorporated and the dough becomes soft and silky.

First Rise:

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Shape and Second Rise:

Turn out the risen dough onto a floured surface and divide it into 8 equal portions.

Shape each portion into a round roll and place them on a baking tray lined with parchment paper.

Cover the rolls with a clean tea towel and let them rise for another 30-45 minutes until puffy.

Bake the Blaa:

Preheat the oven to 200°C (390°F) or as per your oven's instructions.

Bake the Blaa rolls for 15-18 minutes until golden brown and hollow-sounding when tapped on the bottom.

Transfer to a wire rack to cool completely.

Serve and Enjoy:
