Traditional Irish Blaa

Introduction:

Irish Blaa is a soft and fluffy white bread roll that holds a special place in Irish culinary heritage, particularly in Waterford, where it originated. These pillowy rolls are perfect for sandwiches, especially when filled with butter, ham, or cheese. Making Irish Blaa at home allows you to experience the authentic flavors of Ireland's baking tradition.

History:

The history of Irish Blaa dates back to the late 17th century when the Huguenots, French Protestant refugees, settled in Waterford, bringing their baking techniques with them. The term "blaa" is believed to be derived from the French word "blanc," meaning white. Over the centuries, Blaa has become synonymous with Waterford and is cherished as a beloved local specialty.

Ingredients:

500g strong white bread flour

10g salt

10g caster sugar

7g instant yeast

300ml lukewarm water

30g unsalted butter, softened

Flour, for dusting

Instructions:

Mix and Knead Dough:

In a large mixing bowl, combine the flour, salt, sugar, and yeast.

Gradually add the lukewarm water and mix until a dough forms.

Turn out the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

Incorporate Butter:

Add the softened butter to the dough and knead until it is fully incorporated and the dough becomes soft and silky.

First Rise:

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Shape and Second Rise:

Turn out the risen dough onto a floured surface and divide it into 8 equal portions.

Shape each portion into a round roll and place them on a baking tray lined with parchment paper.

Cover the rolls with a clean tea towel and let them rise for another 30-45 minutes until puffy.

Bake the Blaa:

Preheat the oven to 200°C (390°F) or as per your oven's instructions.

Bake the Blaa rolls for 15-18 minutes until golden brown and hollow-sounding when tapped on the bottom.

Transfer to a wire rack to cool completely.

Serve and Enjoy:

Slice the Irish Blaa rolls and enjoy them fresh with butter or use them to make sandwiches filled with your favorite ingredients.
